Bargain Breakfast

Getting out the door each morning can be a challenge, especially now that school is starting up again.  With this in mind, we’ve pulled together some of our favorite ideas for getting out the door with a good breakfast in hand.

Oatmeal-On-The-Run!

Instant oatmeal is a filling and comforting breakfast.  Put the oatmeal with your kids' favorite toppings in small, repurposed jars (jam and condiment jars are great for re-use) on the weekend, then all they have to do is grab and go the next morning with a little hot water and a stir.

Ingredients (per jar)
½ cup instant oatmeal
¼ cup any of the following to taste: raisins, dried chopped apples, crushed walnuts or pecans, blueberries, strawberries, etc.
¼ tsp. cinnamon
¼ tsp. sugar, brown or white

You will need ½ cup boiling/very hot water to add to the jar.  Stir and add more water depending on the consistency desired.  Warning: jar will be *hot* so wrap in paper towels to protect hands, or combine and stir in jar and then pour into a bowl to eat.

Serves 1.


Eggs-A-Go-Go!
Kelly, one of our resident bargainistas, came up with this fantastic make-ahead idea.

Ingredients
8 eggs
¼ cup diced onion
½ cup chopped spinach
½ cup shredded cheddar cheese
Cooking spray

Coat a standard 6 cup muffin tin evenly with non-stick cooking spray or olive oil and set aside.  Preheat the oven to 350 degrees.  Beat eggs until fluffy.  Add in veggies and cheese and mix until combined.  Spoon into the muffin tin evenly.  Bake at 350 degrees for about 22 minutes, or until eggs are fluffy and rise above the top of the muffin tin.  Let cool completely, and store overnight in the fridge.  Warm up for 30 seconds in the microwave for a quick and very easy breakfast.  (And you get protein and veggies!)  These last about a week in the fridge.

Serves 6.

    I sent an Email through your website a couple of weeks ago about eggs. I really thought I'd hear back. Even though I was told that your eggs were produced in California, so there was no worry about the recall; I found out when checking the recall information that I had brought home from your store, a carton of eggs from P-1951, one of the out-of-state plants with millions of recalled eggs. Fortunately, the Julian Date Code was not in the range of the recall -- but every time I think of taking that carton out of the fridge to eat, I get a creepy feeling. Your company should be aware that your egg distributor in California, does distribute eggs from out-of-state, including the plants we're hearing so much about on the news. Salmonella is serious business, and especially more so when it's not just on the outside of the egg. That can be helped with proper sanitary procedures. But, when you're talking about Salmonella inside the egg because the chicken is infected with it, the issue is a lot deeper. Chickens infected with Salmonella shouldn't be producing eggs for the nation's food supply, and neither should they be eating feed with rat feces in it. Perhaps you need to know more about the distributors you deal with, and where they get the merchandise. As I said, I'm disappointed that your company didn't feel the need to write back to me. I've been a customer for nearly 3 decades, and this saddens me.

    I think people are way over reacting to the salmonella egg scare. I was told my whole life to be sure and cook eggs to at least 130 degrees otherwise I might risk getting salmonella. Salmonella was always very common in eggs in the past. Don't people know that cooking kills salmonella?

    We found the communication glitch that caused your message to be left unreturned.  We are working to solve it so it doesn’t happen again.  We take your comments very seriously.

    The information you received about our eggs only being from California was inaccurate.  I’ve researched the egg recall and here are my findings: Grocery Outlet is very careful in where our eggs come from and only buy from certified and reputable egg distributors. Our distributor, Nucal, is California based, but on occasion buys from other certified manufacturers when their demand is higher than what they can supply. In this case, they did receive eggs from the distributor in question, Wright Farms, however we have been assured that we will no longer receive eggs from this distributor.

    We have a very rigorous and comprehensive quality assurance and recall process.  Within 30 minutes of the recall every one of our stores had been contacted and all product with the matching UPC, Plant Number, and Julian Dates was pulled off the shelf and destroyed immediately.  We stand behind our products and will continue to provide our customers with only the highest levels of safety and quality.

    I also experienced the same thing, fortunately I  remembered a  local egg farm in Sonoma, CA, Field of Greens and one thing is for sure you know these are fresh eggs and they as a small operation have never had an incident like this.  I too purchased eggs from a Grocery Outlet, ( I do brag to m any people of the fantastic finds and great prices you provide) but also felt let down.  I have a 12 year old who is very picky about the food she eats and have found Grocery Outlet to be a great lifesaver and money saver.

    Thanks for another great blog entry. I love reading them. The instant outmeal is a no go, very little nutrition once they have been stripped and deprived like this. It's not hard to throw some whole grains on low over the stove top and let them cook while you take your morning shower or get the kids ready for school. Your health will thank you. No one needs processed sugar. Use raw honey, it is nutrient rich and has lovely enzymes for you.

    The egg muffin tin idea is great but NOT a good source of veggies, false advertising. If 1/2 cup cooked spinach is 1 serving and that is divided into 6 servings you are barely getting any vegetables in 1 serving. I say increase the vegetable ingredients per egg used and maybe add some other variety with the spinach and onions like mushrooms or finely grated zuchinni...  Use a jumbo muffin pan and get hearty single servings that are fulfilling and more nutrient dense.

    Grocery Outlet carries all you need to make healthy adjustments to these recipes. If you skimp on time or are lazy about making wholesome, natural, nutrient rich meals then you skimp our and are lazy about health and now is certainly not the time to start. Make changes now, your body will thank you.

    I love Grocery Outlet.  I live in Reno, NV, and I normally shop at the Reno store, but occasionally I wander over to the Sparks store.  I love Grocery Outlet, the products are generally very fresh (produce, meat and dairy), and I have not had anything that I would not purchase again, and again, and again.  I love all the bargins on garden products, and kitchen items also.

    Thanks for these recipes.  They are quick and easy -- and are much healthier than the likely alternative of skipping breakfast all together unless "grab and go" food is available.  Please keep recipes like this coming -- it will help people be healthier!

    hi your store is great in klamath...we drive 60 miles one way to shop there from sprague river....how can we get your item....timer,dimmer unit....2 in a pack....this is in household.tools electronice dept.....use to drive there to get some great oatmeal cookies,,,,,buy they ran out and hard to get ....thanks your shopper....DA.

    In the oatmeal recipe, instead of instant oats, substitute quick cooking oats and let set a few minutes.  I have read that quick cooking oats  have almost the same nutrition values as the whole grain oats, and the dish will have a more interesting texture.  You may need to adjust the amount of water to your taste. 

    Also to add more nutrition, you can stir 1/4 c. instant dried milk powder into each jar with the oats.
