    Goan "Fish Curry"
     1lb 10oz Fish fillet, cut into chunks
    1 tbsp cider vinegar
    1 tsp salt
    1 tsp ground tumeric
    3 tbsp vegetable oil
    2 garlic cloves, crushed
    1 small onion, finely chopped
    2 tsp ground coriander
    1 tsp cayenne pepper
    2 tsp paprika
    2 tbsp tamarind puld plus 2 tbsp boiling water
    3 oz creamed coconut,cut into pieces
    11/4 cups warm water
    plain boiled rice to serve

    Put the fish on a plate and drizzle the vinegar over it . Combine half the salt and half turneric and sprinkle evenly over the fish. cover and set aside 20 minutes.
    Heat the oil in a crock pot and garlic. Brown slightly and the onion and cook slow for 3-4 mins until soft and brown.
    Mix i the remaining turmeric and salt, cayenne pepper and paprika with 2 tablespoon of water to make a paste. add to crock pot, stir in tamarind pulp into boiling water in a small bowl. When thickened and the pulp has come away from the seed, rub through a strainer - discard the seed.


    Add te coconut, warm water and tamarind paste to a pan and stir until the coconut has dissolved. Add fish and any juice into the crock pot and simmer for 10mins or until the sauce has thickened and the fish is tender. Serve over the plain boiled rice.

    Stew ala' Mood

    1 pound of holiday happiness

    2 quarts of flowing sweetness

    1 teaspon of tantilizing seasons

    4 cups of  love potion.

    Optional: Wrapping paper, ribbon and a card.

    Combine all of the above ingredients. Serves a family of any size. Then buy a Grocery Outlet Crock Pot. Take the optional wrapping paper. Package nicely. Finish touches with ribbon a beautiful bow on it. Label the card. And give it to someone as a gift. Recipe can be double, tripled or quadrupled or more for as many recipients as needed.

    Warm & Cozy Beef (or chicken)Stew
    Guaranteed to warm your body & make for a happy meal! 
     
    2-3lb Chuck Roast or Stew Meat Cut up (Browning Meat in Butter with Flour coat optional) Can also use Chicken if you prefer!
    5 cups cut up vegies to your liking. (I like baby carrots, celery, green beans, pearl onions, baby red potatoes, and sometimes add 1 small sweet potato)
    2 cans stewed Italian diced tomatoes
    2-4 cloves garlic (based on taste or liking of garlic)
    1/2-1 cup red wine
    3 cups beef broth or 3 cups water and 1 boullion cube
    2 tbs flour mixed with cold water to make soupy texture.
    Seasoning mix is either Italian spice or Basil, oregano, rosemary,

    Add all ingredients in crock pot let simmer 6-8hours! 
    I put everything together in the morning and by the time its dinner time we are ready to eat!

    I will sometimes make a big pot of plain white rice or rice pilaf to serve with but this is a full healthy meal in itself!

    CrockPot Pulled Pork

    4 pound pork roast (shoulder or butt)2 large onions



    1 cup ginger ale

    1 (18 ounce) bottles favorite barbecue sauce ( I like Sweet Baby Ray's)

    Barbecue sauce, for serving (optional)

    Directions:

    1. Slice one onion and place in crock pot.

    2. Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 8-10  hours.

    3. Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining  fat, bones or skin. Most of the fat will have melted away.

    4. Return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for another 3-4  hours on LOW.

    5. Serve with hamburger buns or rolls and additional barbecue sauce. Any leftovers freeze very well.

    6. TIP: freeze ready-made sandwiches - a scoop of meat on a bun, well-wrapped. These make a great quick meal or snack. To reheat, remove wrapping, wrap in a paper towel, and zap 1-2 minute in the microwave.

    7. Note: Shoulder or butt are recommended because the meat shreds very well. Other cuts do not shred as readily. It is a fattier cut, but the fat melts away in the cooking and is poured away when you discard the liquid.

    Miners Meal      Serves 4
    1/2 pound fresh stew meat cut into chunks
    3 carrots cut into bite size pieces
    1 onion cut into bite size pieces
    2 potatoes peeled and cut into bite size pieces
    1/4 cup of red bell pepper cut into slivers
    1 cup frozen peas
    one cup frozen corn
    After browning the meat place into crock pot with veggies cover with water or your favorite stock, add 1/2 teaspoon garlic salt, black pepper, onion salt, and 1/4 teaspoon celery seed.  Cook on high for one hour turn down and cook on low for 2 hours or until veggies are tender.  Add one can of can biscuits on the top 20 minutes before serving  making sure to leave the lid on cock pot, do not peek, and you will have a miners meal.

    Ingredients

    • 1/2 cup of oil
    • 1/2 cup of sugar

    • 1/2 cup of packed brown sugar

    • 2 eggs (beaten)
    • 1 can (16 oz.) of solid pack pumpkin

    • 1 1/2 cup of sifted flour

    • 1/4 tsp. of salt

    • 1/2 tsp. of cinnamon

    • 1/2 tsp. of pumpkin pie spice or nutmeg

    • 1 tsp. of soda

    • 1 cup of chopped walnuts

    • 1/2 cup of cut up dates

    Instructions

    Blend the oil and both of the sugars into a large bowl. Next, stir in the beaten eggs and canned pumpkin. Add the dry ingredients and mix well. Stir in the nuts and the dates. Pour the resulting batter into a greased and floured 2 lb. coffee tin. Next, place the pan into a crock pot. Cover the top of the can with eight paper towels. Place the crock pot lid on top of the crockpot and bake on high 2 1/2 to 3-1/2 hours.

    E-Z Beef Stew

    left over meat

    one grocery outlet onion

    2-3 carrots

    2 big grocery outlet russet potatoes

    2 cups beef or chicken broth

    1 cup water or red wine

    two cans kidney beans

    splash of lea and perrins

    salt and pepper to taste

    1. cut up veggies and left over meat, throw in the crockpot

    2. add liquid ingredients and beans

    3. add salt and pepper

    4. cook for 4(high)-8(low) hours ( the longer it cooks the better the flavor!)

    5. Enjoy!!

    Chicken tortilla soup


  • 1 pound shredded, cooked chicken
  • 1 (15 ounce) can whole peeled tomatoes, mashed
  • 1 (10 ounce) can enchilada sauce
  • 1 medium onion, chopped
  • 1 (4 ounce) can chopped green chile peppers
  • 2 cloves garlic, minced
  • 2 cups water
  • 1 (14.5 ounce) can chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 (10 ounce) package frozen corn
  • 1 tablespoon chopped cilantro
  • 7 corn tortillas
  • vegetable oil
    1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
    2. Preheat oven to 400 degrees F (200 degrees C).
    3. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
    4. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

    Crock Pot Country Ribs
    2 ingredients, 2 minute prep

    4 lbs Country style pork ribs
    1 bottle of your favorite BBQ sauce

    -Place ribs in the the crock pot.
    -Pour BBQ sauce over ribs.
    -Cook in crock pot on low for 7-8 hours or on high for 3-4.

    Sweet and Tangy Meatballs

    This recipe is a perfect appetizer for a party or meal for  your family.

    1 bag frozen Italian Meatballs
    1 jar of barbecue sauce (we prefer a smokey honey flavor)
    1 jar of grape jelly

    Combine all ingredients in your crockpot. You can simmer on high for a couple of hours if you are in a hurry. I prefer to simmer on low all day.

    They can be served with toothpicks inserted in the center (appetizer) or served over rice for a meal.

    Chili Cheese Dip

    3 cans Hormel Chili with beans
    1 large brick of Velveeta cheese, cut into large cubes
    1 chopped red onion
    1 chopped tomato
    sour cream

    Place all ingredients into your crockpot. Stir together. Cook on low until the cheese is melted and the mixture is bubbly. Top with sour cream and serve with tortilla chips.
